No es solo el local, con una serena decoración cercana al Art-decco. Ni una primera y grata sensación de estar aislado de un exterior de quemazón en pleno mes de agosto. Ni la primera impresión que te acerca, sin quererlo, a un pequeño rincón coqueto de cualquier ciudad moderna con río. Ni la inabarcable ocasión de cenar en un balconcito alado junto a un embarcadero y junto a decenas de patos elegantes, rodeados de una luz justa y suficiente. Ni la maravillosa música que, como debe ser, no parece que está, pero está. Ni siquiera es la comida, dignamente seleccionada. Ni su precio adecuado. Ni el tono mesura de los comensales. Ni la selección precisa de una vajilla y una cubertería que, sin destacar, destaca. Ni el rumor de los cientos de años de historia del jardín que lo circunda. Ni la brisa que se cuela por todos los rincones y te emborracha sin apenas rozarte.
Es todo eso a un tiempo y, sobre todo, el cuerpo de baile y el alma de ballet del servicio en sincronía perfecta. La balada exacta de bailarines y bailarinas que han cambiado el tutú por la pajarita y por una espectacular camiseta marinera.
Es la mirada milimétrica de los dos directores de escena que han prescindido de la batuta y dirigen con miradas el arte de sus artistas sobre las notas justas de una perfecta sinfonía. No se ven desperfectos, y a buen seguro que los habrá. No se derraman bostezos, ni se arrastra pesadumbre. No se quejan, ni hablan a empujones, ni resoplan rarezas ni quejas. No parece real, pero lo es.
Lo increíble y lo más maravilloso es que ninguno sobrepasa los treinta. Más bien se acercan todos a los veinte. Es una gran lección de compromiso, de responsabilidad, de profesionalidad y de educación. Una lección de vida. Cualquier tiempo pasado no fue mejor, ni los jóvenes de hoy en día no saben lo que quieren. Lo saben y lo demuestran.
Volveremos, sin duda, al Restaurante “Matilde” de Aranjuez. Esperemos que no se les acabe el alma joven, auténtica valedora de nuestro deseo de volver.

It is not only the premises, with a serene decoration close to Art-decco. Not a first and pleasant feeling of being isolated from a burning exterior in the middle of August. Not even the first impression that unwittingly brings you closer to a charming little corner of any modern city with a river. Nor the endless opportunity to dine on a small winged balcony next to a jetty and with dozens of elegant ducks, surrounded by a fair and sufficient light. Nor the wonderful music that, as it should be, does not seem to be there, but it is. It is not even the food, worthily selected. Not its adequate price. Nor the measured tone of the diners. Not the precise selection of crockery and cutlery that, without highlighting, stands out. Not the rumor of the hundreds of years of history of the garden that surrounds it. Not even the breeze that sneaks into every corner and gets you drunk without barely touching you.
It is all this at the same time and, above all, the corps de ballet and the ballet soul of the service in perfect sync. The exact ballad of dancers and ballerinas who have changed the tutu for the bow tie and for a spectacular sailor shirt.
It is the pinpoint gaze of the two stage directors who have dispensed with the baton and direct the art of their artists with glances on the right notes of a perfect symphony. No damage can be seen, and surely there will be. No yawns spill, no grief creeps in. They don't complain, they don't jostle, they don't snort oddities or complaints. It doesn't seem real, but it is.
The incredible and the most wonderful thing is that no one is over thirty. Rather, they are all close to twenty. It is a great lesson in commitment, responsibility, professionalism and education. A life lesson. Any time in the past was not better, nor do the young people of today know what they want. They know it and they show it.
We will return, without a doubt, to the “Matilde” Restaurant in Aranjuez. Let's hope that their young soul does not run out, the true champion of our desire to return.
